A red, white, and blue potato salad full of local goodness!
Ingredients
  • 1 lb red [url href=”https://www.capelocallygrown.net/product-category/produce/vegetables/potatoes/” target=”_blank”]potatoes[/url]
  • 1 lb white [url href=”https://www.capelocallygrown.net/product-category/produce/vegetables/potatoes/” target=”_blank”]potatoes[/url]
  • 1 lb blue [url href=”https://www.capelocallygrown.net/product-category/produce/vegetables/potatoes/” target=”_blank”]potatoes[/url]
  • 1/2 doz [url href=”https://www.capelocallygrown.net/product-category/dairy-eggs/eggs/” target=”_blank”]eggs[/url]
  • 1 cup green [url href=”https://www.capelocallygrown.net/product-category/produce/vegetables/onions/” target=”_blank”]onions[/url], chopped
  • 1/2 bulb [url href=”https://www.capelocallygrown.net/product-category/produce/vegetables/garlic/” target=”_blank”]garlic[/url], minced (or 1/2 cup garlic scapes, minced)
  • 1/2 cup olive oil
  • 1 pint yogurt or sour cream
  • 1 1/2 tbsp lemon juice
  • 1 tbsp fresh cilantro
  • 2 1/2 tsp seasoning salt
  • 2 heads rightly colored [url href=”https://www.capelocallygrown.net/product-category/produce/fresh-flowers/edible-flowers/” target=”_blank”]edible flowers[/url]
  • 2 tbsp lemon peel grated
Instructions
  1. Boil potatoes and eggs, allow to cool then cut.
  2. Mix with 1/2 cup of green onions and 1/4 cup of garlic scapes.
  3. Combine olive oil, yogurt/sour cream, 1/2 cup green onions, 1/4 cup garlic scapes to make dressing and pour over.
  4. Gently toss and garnish with flowers and lemon peel.
  5. Chill at least 4 hours.
